Kalamata Olive Hummus

Does anyone out there love olives as much as I do? I know both my sisters adore them, so it must run in the family.


I started making hummus about two years ago when a new family member joined our clan. She loves anything hummus, and I’m sure this new arrangement of ingredients won’t be an exception.


This recipe is quite simple and quick to put together. It’s great for impromptu visitors or just to keep on hand in the refrigerator when you want a healthy snack. Did I mention that it’s gluten free???


Ingredients:

1 can garbanzo beans or chickpeas - drained

1 clove minced garlic

½ cup Kalamata olives

3 tbsp water

2 tbsp lemon juice

1 tbsp olive oil

1 tbsp Kalamata olive brine (really!)

¼ tsp black pepper


Directions:

Put all ingredients in a blender, and pulse until smooth.



Top with a bit more olive oil or sliced olives. I found that extra salt was not needed due to the brininess of the olives. If you like tahini flavor, feel free to add a tbsp or two to the recipe. Serve with fresh veggies, pita chips, or whatever your heart may desire.

The purple color is cool!

*Tip* Hummus is always smoother if you husk the peas, but it tastes the same if you don’t! This time, I didn’t spend any extra time husking.
