Brown Sugar Oats Breakfast Bread

My BF had a birthday this week, and since she had plans for lunch I decided to surprise her with breakfast. Since I try to resist getting in a rut by making the same recipes too often, I decided to attempt something new: Brown Sugar Oats Breakfast Bread!


After doing a quick breakfast bread search on Pinterest and reading through several recipes, I formulated this Brown Sugar Oats Breakfast Bread recipe. Since it makes two loaves, it's great for sharing (or freezing for later enjoyment)!


Ingredients:


2 cups dark brown sugar

2 3/4 cups flour

1/4 cup oats

1 tsp cinnamon

1/4 tsp nutmeg

1 tsp salt

1 Tbsp baking powder

1 tsp vanilla extract

2 cups almond milk (or regular milk)

2 eggs

3/4 cup vegetable oil


Topping:

1/3 c oats

1 1/2 tsp melted butter

1/4 cup dark brown sugar


Directions:


Heat oven to 350 degrees. Spray two loaf pans with non-stick cooking spray and line with parchment paper for easy removal. Mix together dry ingredients. Add in wet ingredients and mix well. Divide mixture evenly between loaf pans.


For the topping: melt butter and mix with 1/3 c oats and 1/4 c dark brown sugar. Sprinkle mixture on top of loaves. Bake for approximately 55 minutes until toothpick poked in center of loaf comes out clean.


Let cool, if you can wait that long, and enjoy!
